Our latest West Coast IPA to roll out of the cannery is Santako. We're based on one of our recent WCIPAs, Plasticity, but replaced the dry-hop portion of Cascade with Amarillo to increase the citrus character. Combined with Citra, Simcoe, and Columbus, the aroma immediately presents tons of marijuana, pine resin, orange and grapefruit peel, and a hint of peach. The first sip continues with more citrus and a small touch of sweetness before finishing with a strong but not overpowering bitterness and dryness. The body is dry, but with a small addition of a light caramel malt, we find a touch of sweetness that joins the bitter finish to give it that zesty character we love in West Coast. Designed with drinkability in mind, and if that weren't enough, gluten-free!
