Alice the Dog, this India Pale Ale (IPA) is characterized by its bold bitterness and distinctive hoppy flavor.
With historical connotations dating back to the days when beers were heavily hopped to withstand the journey from England to India, we wanted this West Coast IPA to continue these traditional touches but with the punk edge characteristic of La Calavera beers.
We could say that Alice The Dog is the culmination of brewing skill combined with our signature passion for complexity.
Aroma: It displays a variety of aromas that combine resinous touches and notes of mango, pineapple and ripe fruit.
Color: soft orange.
Medium carbonation, good foam retention.
Medium body: It is smooth on the palate and leaves a lingering aftertaste.
On the palate: Prepare for a hoppy explosion. This IPA's flavor is dominated by a pronounced bitterness, accompanied by notes of citrus, pineapple, and pine. Tropical flavors initially, accompanied by a resinous and citrusy bitterness. A dry, clean finish leaves room to fully appreciate its flavors. The hops bring us a whole range of very tropical and citrusy notes and flavors that blend sweetness, hints of fruit, and bitterness.
Very drinkable and with low alcohol perception.
Pairing: It pairs exceptionally well with grilled meats, gourmet burgers, spicy dishes, and strong cheeses like cheddar or Gouda. It also pairs perfectly with fresh seafood and citrus salads.
